1 ½ cups sifted all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1 cup butter, softened
½ cup firmly packed light brown sugar
1 cup granulated sugar
1 large egg
1 tsp. vanilla extract
1 ½ cups old-fashioned rolled oats (not quick cooking)
1 cup semi-sweet chocolate chips
Step 1:
Mix together flour, baking soda and cinnamon.
Step 2:
Beat together butter, brown sugar and granulated sugar at medium speed until light and fluffy. Beat in egg and vanilla.
Step 3: At low speed, beat in flour mixture, ¼ cup at a time, until well blended. Blend in oats and mix well. Fold in chocolate chips. Cover with plastic wrap and chill for 1 hour.
Step 4:
Preheat oven to 350°. Grease 2 baking sheets.
Step 5:
Remove dough from refrigerator and shape into 1-inch balls. Place cookies on greased baking sheets, 2-inches apart. Flatten each cookie slightly (the back of a saucer works well.)
Step 6:
Bake cookies for 10-12 minutes or until edges are lightly browned. Remove from oven and let stand on baking sheets for 1-2 minutes then remove to wire racks to completely cool.
