1/4 cup butter, unsalted
2 Tbsp. shortening
1/2 cup Masa Harina (find in the flour section of your grocery store)
3 Tbsp. cold water
1 (10 oz.) pkg. frozen corn
3 Tbsp. cornmeal
1/4 cup granulated sugar
3 Tbsp. whipping cream
1 Tbsp. sour cream
1/4 tsp. baking powder
1/4 tsp. salt
Preheat oven to 350 degrees.
In large mixing bowl, cream butter and shortening until light and fluffy. Gradually add Masa Harina and continue mixing. Gradually add water, mixing to thoroughly incorporate.
Coarsely chop corn kernels and add to Masa mixture.
In separate bowl, combine cornmeal, sugar, whipping cream, sour cream, baking powder and salt. Add to Masa mixture and mix until well blended.
Preheat 8-inch baking dish or cast iron skillet in oven for 10 minutes. This will help make the crust very crispy. Pour mixture into the greased baking dish. Cover with foil and bake 40-50 minutes or until cake is firm. Allow cake to stand 15 minutes before cutting.
