These flavors are spectacular together!
½ cup peach preserves
3 Tbsp. lime juice
2 Tbsp. soy sauce
2 tsp. fresh ginger, grated
¼ tsp. cayenne pepper
4 (16 oz.) salmon fillets, 1-inch thick
2 cups fresh peaches, peeled and diced
1 medium cucumbers, seeded and diced
1 ½ tsp. grated lime zest
Place preserves in small bowl. With fork, mash larger pieces. Whisk in lime juice, soy sauce, ginger and cayenne pepper. Reserve 2 tablespoons of mixture. Spoon remaining mixture into large plastic bag. Add salmon and rotate bag to thoroughly coat. Marinate in refrigerator for 15 minutes.
In medium bowl, combine diced peaches, cucumber, 2 Tbsp. reserved peach preserves mixture and lime zest.
Heat grill to medium heat. Remove salmon from bag and discard marinade. Place salmon on lightly greased grill and cook for 8-10 minutes or until salmon just begins to flake, turning once.
Remove to serving plate and spoon peach salsa over salmon. Serve immediately.
