Try this updated version of a family favorite. Perfect hand-held bites of savory meatloaf with a sweet brown sugar glaze. Garnish with your favorite condiments. Better than a burger!
1 ½ lb. ground beef
1 cup saltine cracker crumbs
2 eggs, slightly beaten
½ cup onions, finely chopped
2 Tbsp. green pepper, finely chopped
1 ½ tsp. salt
2 Tbsp. Worcestershire sauce
1 (4 oz.) can tomato sauce
Slider buns
Garnish tomato, lettuce, onions, mayonnaise, mustard
In food processor, pulse saltine crackers until smooth and crumbly. Transfer crackers to a large bowl and add ground beef, eggs, onions, green pepper, salt, Worcestershire sauce and tomato sauce. Mix until well blended.
Shape into 3-inch patties and place in shallow baking dish. Prepare Glaze (recipe below) and generously brush on top of patties. Bake in 350 degree oven for 20-25 minutes. Remove from oven and place on slider buns. Top with tomato, lettuce, onion and favorite condiments. Serve hot or cold.
Brown Sugar Glaze:
½ cup ketchup
1/3 cup packed brown sugar
1 ½ Tbsp. Worcestershire sauce
½ tsp. prepared mustard
Combine all glaze ingredients in small bowl and mix well. Brush on top of meatloaf patties before baking.
