Raspberry Snowflake Cookies

1/2 cup butter, softened

1/2 cup vegetable shortening

1 cup granulated sugar

2 large eggs

1 Tbsp. lemon zest

1 tsp. vanilla extract

1/2 tsp. almond extract

3 1/2 cups all-purpose flour

1/2 tsp. baking powder

1/2 tsp. salt

1/3 cup French Raspberry Cordial Jam

1 cup sifted powdered sugar

In large mixing bowl, cream butter and shortening together at medium speed until soft and creamy. Gradually add 1 cup granulated sugar, beating well. Add eggs, lemon zest and flavorings, mixing well.

In separate bowl, whisk together flour, baking powder and salt. Gradually add to butter mixture, mixing well to incorporate. Cover dough and chill1 hour.

Divide dough in half and store 1 portion in refrigerator while preparing other portion.

Roll remaining portion of dough to 1/8-inch thickness on a lightly floured surface. Cut with a 2 1/2-inch star-shaped cookie cutter and place on ungreased cookie sheets.

Bake in preheated 375 degree oven for 7-8 minutes or until lightly browned; cool 2 minutes on cookie sheets. Transfer to wire racks to cool. Repeat procedure with remaining portion of dough.

Just before serving, spread center of half of cookies with about 1/4 tsp. French Raspberry Cordial Jam. Place a second cookie on top, alternating points of stars of top and bottom cookies. Sprinkle generously with powdered sugar.

Yield: 5 dozen


French Raspberry Brownies

1/2 cup butter, softened

1 cup sugar

2 large eggs

2 (1 ounce) squares unsweetened chocolate, melted and cooled

3/4 cup all-purpose flour

1 cup walnuts, chopped

1/3 cup French Raspberry Cordial Jam

In large mixing bowl, beat butter at medium speed until soft and creamy. Gradually add sugar, beating well. Add eggs and melted chocolate, mixing well. Add flour, mixing well. Stir in walnuts.

Spoon half of batter into greased and floured 9-inch square pan. Spread French Raspberry Cordial Jam over batter; top with remaining batter. Bake in preheated 350 degree oven for 28-30 minutes.

Yield: 3 dozen
