2 cups chicken broth (not fat-free)
2 medium potatoes, peeled and chopped
1 medium onion, diced
2 carrots, sliced thin
4 ears fresh corn, cut from cob
1 cup fresh or frozen green beans
1/2 cup frozen peas
2 cups cabbage, chopped
1 (8 oz.) can tomato sauce
4 cups fresh tomatoes, chopped
1 1/2 tsp. sugar
Salt and pepper to taste
1/2 cup okra, sliced (optional)
Place chicken broth in heavy soup pot. Add all ingredients and simmer at least 1 1/2 hours. Add enough water during cooking to make about 3 quarts. Taste and season with additional salt and pepper if needed.
