A delicious side dish for any meal. Very satisfying.
1 (32 oz.) pkg. frozen shredded has brown potatoes
1 can cream of chicken soup
1 small onion, chopped
1 cup cheddar cheese, shredded
1 cup butter, melted and divided
1 (8 oz.) carton sour cream
1 cup cornflakes, crushed
Preheat oven to 350 degrees. In large bowl, combine hash browns, soup, onion, cheese, 1/2 cup melted butter and sour cream. Mix well. Pat into a greased 9×13-inch baking dish.
In small bowl, combine reserved 1/2 cup melted butter and crushed cornflakes. Stir to thoroughly coat cornflakes. Sprinkle cornflake mixture on top of casserole. Bake for 30-45 minutes.
