Take your shrimp or chicken to the next level with this winning combination of heat and sweet! Perfect for marinating and basting your favorite entrée during halftime. This team of tequila, triple sec and jalapeno is sure to be a game winner.
¼ cup vegetable oil
3 Tbsp. fresh lime juice
3 Tbsp. Tequila
2 Tbsp. Triple Sec
1 large jalapeno chili, seeded and minced
1 ½ tsp. grated lime zest
1 tsp. chili powder
1 tsp. sugar
½ tsp. kosher salt
1 ½ lbs. shrimp, peeled and deveined OR chicken legs, thighs or wings
Whisk all ingredients, except shrimp or chicken, together in a medium-size bowl. Allow the mixture to rest for at least 20 minutes. This marinade can be prepared 1 day in advance. Simply cover and refrigerate for up to 24 hours.
To marinate, place shrimp or chicken in large baking dish or plastic bag and cover with marinade. Cover dish with plastic wrap or seal bag and refrigerate shrimp for 30 minutes; the chicken for 1 to 3 hours.
Remove shrimp or chicken from marinade, reserving remaining marinade. Grill shrimp on indirect heat for 3-4 minutes per side, basting with marinade. Grill chicken on direct heat for about 8 minutes per side. (Chicken legs will take a little longer).
Place remaining marinade in heavy saucepan and bring to a boil. Boil for 1 minute and remove from heat. Spoon over shrimp before serving, or use as a dipping sauce.
Yields about ¾ cup
