2 cups granulated sugar
1 cup margarine
6 very ripe bananas, mashed
4 eggs, well beaten
2 1/2 cups cake flour
1 tsp. salt
2 tsp. baking soda
Preheat oven to 350-degrees. Grease 2 9x5x3-inch loaf pans. Set aside.
In large mixing bowl, cream together sugar and margarine. Add mashed bananas and eggs. Mix well.
In separate bowl, sift together 3 times, flour, salt and baking soda. Slowly add flour mixture to creamed mixture and blend until just incorporated. Do not over-mix.
Pour into greased loaf pans. Bake for 55 minutes or until inserted toothpick comes out clean from center of loaf. Remove from oven and turn out immediately onto wire rack to cool.
