6 cups chopped peaches
2 ½ cups sugar
2 Tbsp. flour
½ tsp. salt
3 eggs, beaten
1 qt. milk
½ pt. whipping cream
1 Tbsp. vanilla
Place peaches in bowl and sprinkle with 1 cup sugar. In saucepan, combine remaining sugar, flour and salt and blend in beaten eggs. Add milk and cook over low heat until slightly thickened, stirring constantly. Remove from heat and cool. Add cream, vanilla and peaches and pour into ice cream container and freeze according to manufacturer’s directions.
Makes 1 gallon
