In the Perfect 10 Cookbook test kitchens, we’re always creating something special. This week we’ll be preparing our lucious Danish Pancakes.
These thin pancakes are similar to a crepe. Dusted with powdered sugar or filled with your favorite jam, they can be enjoyed for breakfast, dinner or dessert.
Here is our Danish Pancake recipe served with fresh strawberries and cream cheese. Perfect for a leisurely summer breakfast or brunch on the patio.
Danish Pancakes
1 cup flour
1 egg
1 1/4 cup milk
Pinch salt
Crisco for frying
Blueberries (optional garnish)
Mix all ingredients, except Crisco, together in medium-sized bowl and set aside to rest for 10 minutes. (Very important step!)
Using a crepe pan or small, non-stick skillet, heat 1 Tbsp. of Crisco to medium-high heat. Using a measuring cup, pour 1/4 cup batter around edges of skillet. Tilt skillet inward until batter runs into the center and the entire surface is coated. (Add just a little more batter if necessary, depending on the size of your skillet. Pancakes should be approx. 8-inches in diameter.)
When the pancake begins to turn light brown, flip and continue cooking on opposite side. Remove to paper towel. Place another paper towel on top to keep warm. Place in warm, 200-degree oven while you continue cooking remaining pancakes. Place another 1 Tbsp. Crisco in skillet and repeat process, using additional Crisco for each pancake.
To serve, place 3 Tbsp. of the Strawberry Cream Cheese filling in the center of the lower third of each pancake. Fold the bottom of the pancake over the filling and roll up gently. Top with additional strawberries, adding blueberries for colorful garnish.
Strawberry Cream Cheese Filling
1 (8 oz.) pkg. cream cheese, room temperature
1/4 cup sour cream
1/4 cup confectioners’ sugar
1/4 cup fresh strawberries, pureed
1/4 tsp. vanilla
In medium-sized bowl or standing mixer, beat cream cheese until smooth and fluffy. Add sour cream, sugar, pureed strawberries and vanilla. Beat until smooth, scraping down sides of bowl as needed.
Place in Danish Pancake as directed above and roll up. Serve immediately.
