This peanut brittle is a must have on any holiday candy tray. Once you try a homemade brittle, you’ll never buy the boxed brittle again.
2 cups sugar
1 cup light corn syrup
1/2 cup water
1 cup butter, cut into tablespoons
2 cups raw peanuts
1 tsp. baking soda
In large saucepan, combine sugar, corn syrup and water. Cook over low heat until sugar is dissolved, stirring frequently. Bring mixture to full boil
. This takes about 30 minutes.Add butter and continue cooking, stirring occasionallly until candy thermometer reads 280-degrees or small amount of mixture forms a soft strand when dropped into ice.
Stir in peanuts and continue cooking, stirring constantly, until candy thermometer reaches 305 degrees or small amount of mixture forms a brittle stand when dropped into ice water.
Remove from heat and stir in baking soda. Pour mixture onto 2 buttered cookie sheets. Spread about 1/4-inch thick. Cool completely and break into pieces.
